Sweet apple zoodles

Yes, you can actually use zoodles (zucchini spiralized into noodles) in a sweet meal. I have a serious sweet tooth and I love desserts. But unfortunately, you can't just eat desserts and breakfast all day long, so I've figured out how to sneak some veggies into my sweet breakfasts/desserts.
One of my favorite sneaky vegetables is zucchini. I call it sneaky because it doesn't really have a taste on it's own, so you can give it any flavor, even any shape and texture you want. I've made a couple of dishes with it already, but here's a dish that you won't know how much you're gonna love it, until you taste it!
Here's the recipe for one serving:
3-4 apples
3 tbsp lemon juice
2 tbsp sweetener of choice*
1 zucchini
Optional: raisins, freeze dried or frozen berries

Dice the apples and add them to a pot. Add a splash of water (enough to cover the bottom of the pot), put the lid on and bring it to a boil. Boil for 5 minutes or until the apples are soft. While the apples are cooking, spiralize the zucchini. When the apples are mushy, mash them with a spoon or a potato masher. Add the zoodles to the pot and cook for 3 more minutes. Turn the heat off and stir in the lemon juice and the sweetener.
Put it into a bowl, garnish with berries or raisins and enjoy!
