Yep, vegan pancakes without bananas in the dough! Super crispy in the edges, soft in the middle, sweet and warm pancakes is what you're about to get the recipe for. You can choose whether or not you want them to be super healthy.
Here's the recipe to make the amount in the pictures:

60g flour of choice (plain or buckwheat works well)
25g sugar/sweetener of choice (brown sugar or sukrin gold works too)
2g baking powder
120g soy milk (or other non dairy milk)

1-2 tbsp coconut oil for frying
Optional: cinnamon, cocoa powder or vanilla powder

Mix all the dry ingredients, stir in the milk, add flavoring and heat a pan on medium heat. Add a little coconut oil to the pan and pour the pancake mix onto the pan. It will form a nice and round pancake automatically. Fry until bubbles appear, flip and fry for another minute. Repeat until there's no mixture left. Add toppings to the stack and enjoy!
I put chocolate chunks in between the pancakes right after I took them of the pan, so the chocolate melts and it tastes amazing. 
I made these for my sister's birthday breakfast today and let's just say, that she enjoyed it very much.
