Incredibly delicious and easy cookies to make on a sunday as snack prepping for the busy week ahead. Or maybe you just want some healthy and vegan cookies for your afternoon tea, either way, you should definitely give them a try and add your personal twist.
Here's the recipe:
3 ripe bananas
200 g oats
Pick one of these flavor variations:
50 g raspberries (or other berries) + 1 tsp vanilla essens
10 g coconut flour + 1 tsp coconut essens
1 apple + 1 tbsp cinnamon
2 tbsp cocoa powder + 1 tbsp peanut butter
Preheat the oven to 200 degrees Celsius or 400 degrees Fahrenheit.
Mash the bananas with a fork and mix with the oats and the flavor combinations you choose.
Put one tbsp of the batter at a time onto a lined baking tray and press them down a little bit, so they look nice and round. Bake for 15 minutes or until golden brown.
These pictures are only of the two first variations listed in the recipe but don't worry, I have taste tested them all and they're sooooo good. The only downside is, that it's vegan and it's dangerous for people like me, who might end up eaten the whole batter before baking it.
If you want to store them and save them throughout the week, make sure they're completely cooled off before you put them in a plastic bag or box and store them in the fridge.
