Sometimes, you feel like having a light meal but you don't feel like having a sad salad. So here's a recipe, that's just as easy and quick to make:
1/2 can of tomato paste
1 tbsp nutritional yeast (optional) (adds cheese flavor)
Salt and pepper to taste
1 tsp garlic powder
Optional flavor boosters: sautéed mushrooms and caramelized onions
Spiralize the zucchini or use a peeler to make strips, which will also work as pasta. If you want to eat this raw, just mix the ingredients and dig in. But if you want a warm and comforting bolognese, heat a wok or a non-stick pan on medium heat. Add all the ingredients and mix it all up. Fry for three minutes, just to heat it up. Plate up and enjoy!
To make this even better, you can finely chop a small onion and a handful of mushrooms, then fry them for five minutes before adding all the other ingredients. You can also use some leftover veggies, chop them up a little and add them to the dish, just like I did with some broccoli.
