Quinoa crust pizza

Wow this was absolutely amazing. The crust is so crispy and the filling on top is just my favorite combination of vegetables. I ate the whole pizza for dinner today and I must admit, I'm just a little bit full but omg it was divine and so worth the foodbaby!
There are endless variations of this, so go ahead and make your favorite mix and match of toppings on the healthiest crust ever. 
It's so easy to make and it only took me 30 minutes in total. Vegan pizza guys, still better than the bought ones in my opinion and you know exactly what's in it and you'll feel amazing afterwards.
Here's the recipe for the crust:

3/4 of a cup uncooked quinoa
1 tsp baking powder
1 tsp salt

Soak the uncooked quinoa for at least eight hours. 
Preheat the oven to 200 degrees Celsius or 400 degrees Fahrenheit.
Rinse and drain the quinoa. Blend in a foodprocessor or a powerful blender with the baking powder and the salt for 1-2 minutes. Pour it out on a lined baking tray and spread it out into a circle with a spoon. Bake for 15 minutes, add toppings and bake for another 5-10 minutes.
I topped mine with tomato paste, mushrooms, zucchini, garlic powder and herb spice and then baked it for 7 minutes. Lastly, I added chopped kale, grated carrots and some nutritional yeast. Next time, I'll probably experiment with bell peppers, onions, tomatoes, spinach, broccoli, cauliflower, asparagus, olives or even pineapple slices. But you should definitely try this out! You'll impress yourself (or at least I did)!
