Would you believe me if I told you that this chocolate mousse consists of spinach, beans, carrots and fruit AND it tastes absolutely amazingly chocolaty? Well, you gotta try this easy recipe to figure out if I'm right!
5 tbsp date paste (dates blended with a little water)
1 ripe banana
A handful of spinach
1 can of kidney beans
5 tbsp cocoa powder
1-2 tbsp lemon- or orangejuice
2 tbsp soy milk or coconut milk
Blend all of the ingredients in a strong blender or in a foodprocessor. Let it cool in the fridge and serve with some fresh berries, crunchy granola or enjoy it plain.
If you're too impatient to wait for the mousse to cool down, simply use a frozen ripe banana instead of one at roomtemperature.
