Vegan rhubarb popsicles

I just bought these popsicle forms, which I was dying to try out. So I froze some of my rhubarb smoothie in the forms and it was seriously the best popsicle, I've ever had. It is so refreshing and cooling on a warm day. It's perfect as a snack when you need something to cool you off and a boost of vitamins and deliciousness.
Most of the pictures are of the smoothie because the popsicles weren't that photogenic (but amazingly delicious anyway), but I hope that'll tempt you enough to try out this recipe!
Here's the recipe:

200 g rhubarb
100 g strawberries or raspberries
2 ripe bananas
1-2 tbsp stevia or another sweetener for your liking
1/2 can of coconut milk

Optional: vanilla essens or seeds or vanilla protein powder

Rinse the rhubarb and chop them in small bites. Boil them in a little water until they're soft. You can see a full recipe here. Let the rhubarb compote cool (you can put it in a jar and set it in the fridge until the next day).
Blend the rhubarb compote with the rest of the ingredients. Put the smoothie in popsicle forms or just drink the best summer smoothie as it is.
I topped it with freeze dried raspberries, drank some for breakfast and froze the rest. This is so so so good. Honestly, so much better than the once you buy.
If you don't have rhubarb, I think it would be pretty amazing with just strawberries and raspberries too. As always, you can experiment as much as you want. Enjoy!
