No rice sushi

I considered calling this "low carb sushi" but I absolutely hate those food trends and people thinking it's a miracle food when it's low carb, gluten free, low fat, raw, vegan, paleo and whatever all the food trends nowadays are. In my opnion, food should be loved and enjoyed. I like eating plant based and organic food but I don't really care, if you love meat because if it makes you happy and feel good, then go for it. Don't let anyone take your love for food away, even if you're trying to loose, gain or maintain your weight.
This is simply sushi without rice because I wanted to experiment. I've been experimenting with sushi without rice before and now I've improved the recipe even more! I fact, the homemade sushi recipe was the first post on my blog ever and I'm definitely so much better at blogging now (at least I think so). So here's an easy way to make cheap, easy, delicious and healthy sushi.
Here's the recipe to serve two people:

5 big cauliflower florets
1 dl quinoa
3 nori sheets
1 ripe avocado
2 carrots
1/2 cucumber
1 mango
3 strawberries
10 boiled shrimps (or substitute with a block of tofu)

Optional additions: leftover omelette, nuts, tahin, smoked salmon, other fruits and veggies.

Boil the cauliflower in salted water for about 10 minutes. Boil the quinoa in 2 dl water for 15-20 minutes. Let it cool. Mash the cauliflower with a fork and mix it with the quinoa. Now you have the "rice". Chop the veggies and the fruit. Roll the sushi and add some lemon juice, salt, pepper or whatever you like. Cut it with a sharp knife and serve on a big plate with soy sauce and sushi ginger.
