Sweet and savory rice paper rolls

Rice paper rolls are so light, fresh and exciting to eat because of all the different veggies and fruit. They add a speciel and pure flavor, which surprise you every time you chew. I made some savory combinations, which I had for lunch and of course, I made some sweet variations to have as dessert afterwards. The recipe is enough for one person but you might want some more of this or more of that and then you can easily make a lunch bowl or a fruit salad out of the leftovers!
 You don't really need any dipping sauces for these because they're already bursting with delicious flavor of the vegetables and fruit. But as always, feel free to add or substitute any of the ingredients with your favorites! They're also super easy to make vegan, just by substituting the shrimps and the smoked salmon with hummus or something! Here's the recipe for the savory rolls:

3-5 rice paper
2 small carrots
1/2 cucumber or zucchini
1/2 large avocado
1 stalk of spring onion
1/2 ripe mango
A handful of roasted and salted cashew nuts (optional)
A handful of cooked shrimps (optional)
Lemon juice
2 slices of smoked salmon (optional)
Pour some water into a deep plate, slice the vegetables and chop the nuts. Dip the first sheet of rice paper in the water and let it soften for a minute. Gently, place it onto a cutting board and fill with the desired ingredients. Make variations and play with it! Fold it like a burrito and make sure it's very tight. They're really sticky but just give it your best! Mine were far from perfect, especially the first one, so I ate it before anyone noticed.
Here's the recipe for the sweet rolls:

1 ripe banana
1/2 ripe mango
A handful of frozen raspberrries
1/2 large avocado
1 apple
5 tsp peanut butter (optional)
10 mint leaves (optional)

Slice avocado, banana, mango and apple. Do the same things as you did with the savory ones and add mint leaves, peanut butter or some other fruits if you like. Be creative and experiment with different combinations!
As you can see in the picture, I also added some chopped almonds to one of them. The important thing in both the savory and the sweet rolls is, that you have all sorts of textures represented in them. You must have something soft (avocado), something chewy (mango), something crunchy or crispy (nuts) and something that gives the extra little punch of flavor (mint leaves or lemon juice).
