These cupcakes or muffins are perfect to bake on Sundays, so they're ready to go in your bag when you're on the go monday morning. The flavors hiding in there are cocoa, walnuts, apples and banana, which makes them filled with fiber, healthy fats, protein and deliciousness.
Here's the recipe to make 8 muffins:
3 ripe bananas
40 g walnuts
2 tbsp cocoa powder
3-4 tbsp skyr or soy yoghurt if you're vegan
100 g oats
Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mash the bananas with a fork and chop the apple (save some slices for decoration). Mix all the ingredients in a bowl and transfer into muffinforms. Decorate them with a slice of apple and put them in the oven for about 15 minutes. Let them cool and enjoy!
As always, feel free to decorate them with peanut butter, other fruits, your creative frostings, sprinkles or whatever you like. Instead of cocoa powder you can use carob, a little cinnamon, heat resistant protein powder or vanilla seeds to give it the flavor you desire.
If you don't like walnuts, you can substitute with any kind of nut or seed if you like. You can also add some cocoa nibs or another kind of fruit instead of apples. It's all up to your imagination!
