Icecream sandwich and chocolate mousse

So, my dad bought strawberries and what's better than strawberries with chocolate? The answer is healthy chocolate mousse. And chocolate ice-cream sandwiches topped with sliced strawberries. Do I have your attention yet?
It's so simple and easy to make and yet it tastes like heaven. Actually, it's not really ice-cream because I cheated and used vanilla skyr as the ice-cream layer. But you can whisk the thick part of a refrigerated full-fat coconut milk and mix it with vanilla essens and a little sweetener if you would like to make a vegan or bounty flavored dessert. The "sandwich" is just my granola bars cut into circles and then it's just topped with sliced and fresh strawberries. This dessert reminds me of summer and how fabulous is that, when you can have a summer dessert for breakfast?
Now, the recipe for a single serving and healthy chocolate mousse:

1 ripe banana
1 ripe avocado
3 tbsp cocoa powder (or 1/2 chocolate protein powder)
5 dates (or another banana)
Juice from an orange or a lemon

Blend it all or mash and mix with a fork. Adjust the taste with the lemon- or orange juice and add more cocoa powder if you like. Top with any kind of fruit or whatever you desire.
This is a chocolate mousse you can eat with everything. As a healthy nutella on toasted bread, as dipping for your favorite fruit, as an ice-cream layer after chilling in the freezer in this ice-cream sandwich or just plain by it self. Be creative and enjoy!
