Don't these raspberry muffins look cute and delicious? Well, I can definitely assure you that they are and you have to bake them ASAP! I added some protein so they work as an after workout snack and as a complete breakfast on the go or actually, you can eat it whenever you want because it's refined sugar free, flour free and there's no added butter! All these babies consist are fruit, fiber and protein so why not bake a fuelling batch right now!
I didn't make any fancy toppings but of course, you can go crazy with the sprinkles, frostings and funny things to put on your cupcakes. I just added a little raspberry skyr but I'm sure it would've looked super fabulous with some freeze dried raspberries or fresh ones on top!
As you can see on the picture, I added a little chunk of a raspberry white chocolate questbar as a protein surprise in the middle but you can add whatever you want to hide a little bit of excitement inside. Especially for children, this surprise will be a hit!
Here's the recipe:
3 mashed ripe bananas
5 tbsp vanilla skyr or another kind of thick yoghurt
150 g frozen raspberries
100 g oats
20 g psyssilium HUSK (or more oats)
50 g coconut flour
1 tsp baking powder
1 scoop of vanilla white chocolate protein powder (optional)
1 raspberry white chocolate questbar (optional)
Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mix all the ingredients in a bowl except for the questbar. Cut the bar into 12 chunks. Spoon the batter into 12 muffinforms and press a chunk in the middle of each of them. Make sure the chunks are isolated in the batter and bake for 20 minutes.
Let them cool and serve, pack in small bags as snacks for the next days or decorate them with colorful toppings!
The protein powder adds some sweetness to the muffins so if you don't have that ingredient, just add a little honey, sukrin, stevia or another kind of sweetener. Instead of the protein bar chunks, you can easily substitute it with other berries, chocolate or even nut butter. There's an open opportunity to be creative and experiment with it!
