Chicken fitness noodles

This is a very quick a easy stir fry to whip up when you're in a rush for lunch or dinner. The recipe is to serve two people or you can save the other half for the next day to have in your lunchbox. You can use all your leftover veggies and leftover chicken or you can use raw ingredients if you like. I used the calorie free fitness noodles from fitnessguru and they're so delicious and ready to eat straight out of the pack! They absorb the flavors from the asian spices and sauces, which makes them burst of amazing taste!
 Here's the recipe:

1 pack of fitness noodles
400 g chicken (cooked and raw can be used)
Half a leek
200 g leftover veggies (I used broccoli and red bell peppers)
1 tbsp oister or fish sauce
1 tbsp soy sauce
1 tbsp curry
1 lime
Cashew nuts and sundried tomatoes for extra deliciousness
Chop the leek and fry in a pan. I didn't add any oil but you can add some if you don't have a non-stick pan. Chop the veggies and the chicken into bite-sized chunks. Add to the pan with the noodles. Add fish/oister sauce, soy sauce, lime juice and fry for two minutes. Keep stirring to stop it from sticking and plate it up. Top with the other half of the lime and drizzle with cashew nuts.
You can actually be really creative with this recipe and this is actually just a guideline to give you an idea of how it could be done. It's such a healthy, quick and heavenly dish every time so what's not to like? I will definitely make this again soon and maybe with some other veggies and chickpeas instead of chicken to make it vegetarian. Good luck!
The noodles can be substituted with zucchini noodles or normal noodles but the product from fitnessguru is definitely worth a try if you love noodle dishes as much as I do and don't want the amount of carbs in your diet to come from gluten products!
