Here's the blog's very first muffin recipe and therefore it is also the best one! Of course, it's sugar- and flour free and filled with fruit, protein and peanut butter. They are soft, moist and super delicious so go ahead and bake them now! They're perfect as snacks on the go or as a part of breakfast but you can enjoy them whenever you want and maybe let your friends and family have a little taste.
Here's the recipe for 12 muffins:
1 pear or an apple
80 g millet or oats (I used 50/50)
15 g psylliumHUSK (optional)
20 g chopped nuts (optinal for an extra crunch)
3 tbsp skyr
1 tsp baking powder
1/2 scoop peanut butter whey (optional)
12 tsp peanut butter
Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mash the bananas with a fork, chop the apple or the pear and put it into a bowl. Mix with all the other ingredients except for the peanut butter.
Pour 1 tbsp of the mixture into 12 muffinforms and make a little hole in the middle of each of them. Fill the little hole with 1 tsp peanutbutter and cover with a little more of the mixture.
Bake for about 20 minutes and serve with more peanut butter or eat them as they are!
I made some healthy frosting to top them with by mixing some vanilla skyr with 1/2 scoop peanut butter protein powder and it tasted divine! Get creative with the toppings and have fun with your clean and cute cupcakes! You can also try to put a chunk of fruit, dark chocolate or protein bar in the middle to variate the surprises inside!
