Breakfast oat cake

Today's recipe is an easy breakfast for you to cook on lazy days where you crave something warm, comforting, crispy and still want it to be healthy. I've experimented a little with these breakfast oatcakes and I'm finally happy with the flavor! It's actually like baked oatmeal but not moist and gooey, instead it's crispy and super great when you pour some natural sweetened milk over it.
Like almost all of my recipes, you can also adjust the ingredients is this fellah for your liking. Sometimes I use protein powder to flavor it, sometimes cocoa powder or cinnamon and I always end up adding peanut butter. It's all up to you so just use this recipe as a guideline!
Here's the guide to serve two people:

80 g oats
20 g coconut flour
20 g chopped nuts
1 mashed ripe banana
1 egg
1 tsp cinnamon/1 tbsp cocoa powder/1 scoop protein powder
1 tbsp natural sweetener like honey
Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mix all the ingredients and put the mixture into a baking dish or form as cookies if you want them to bake faster. Bake for 20-40 minutes according to the size of the cake and serve with your favorite toppings!
I like to pour it with soy milk, lots of natural sweetener, peanut butter, vanilla skyr (yoghurt), fresh fruit or just have it by it self.
