Christmas banana loaf

I finally had some time to bake and experiment in the kitchen and the result was so rich and delicious. It's filled with christmassy flavors and of course without sugar and other nasties. I added clementine to this loaf but it tasted really bitter, so I left that part out of the recipe for you guys. Despite that little mistake, the banana bread was as always super yummy and a 100% healthy way to enjoy the gingerbread taste og christmas!

Here's the recipe:

50 g oats
20 g physillium husks (or more oats)
50 g pistachio nuts (optional)
2 tsp baking powder
2 chopped apples
4 chopped dried figs
1 tsp nutmeg
1 tsp cinnamon
1 tsp cardamom
1 tsp nelliker
1 tsp ginger
3 mashed bananas
2 eggs

Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mix all the ingredients and pour it into a baking dish lines with parchment paper. 
Bake for about 40 minutes and enjoy! 
You can have this as a treat, for breakfast or just whenever you feel like comforting your tastebuds.
