Blueberry scones

Healthy blueberry scones without sugar or butter! Filled with fruit and fiber to fuel you up for breakfast, snacks, on the go or whenever you feel like eating something insanely delicious without feeling guilty. 

Before we go any further, I want to say happy December! I'm gonna post some christmas recipes soon but I've just been to busy to feel the christmas spirit so far (horrible, I know). Until I start singing christmas songs, light candles and buying gifts, these blueberry scones with a little zero-calorie-flour-sugar (sukrin melis) sprinkled on top will do as snow for now. 

Here's the recipe, which makes 12 scones:

80 g coconut flour
80 g oats
80 g rye flour (wholegrain flour)
2 tsp baking powder
1 tsp salt
2 eggs
1 mashed banana
50 g skyr or natural yoghurt
1 tbsp natural sweetener (honey or syrup)
100-150 g frozen blueberries (orther berries or fruit can be used)

Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mix all the ingredients (expect half of one of the eggs) and form a sticky batter. Make small squares or buns out of the batter and brush with the remaining egg. 
Bake in the middle of the oven for about 20 minutes. 
Serve the british way with a cup of tea, have it with more sweetener, skyr, yoghurt or just enjoy them as they are. I had three as an afternoon snack today because they were just too good. Enjoy!
