Gooey cookies with dates
Here is a short blogpost and a quick recipe while you wait for the fantastic brownie recipe!
I had 300 g of soft medjool dates and I was wondering what to do with them so I started experimenting. I wanted to create something delicious and something I could bring to school as a quick snack so I came up with these gooey cookies with dates. They taste like caramel and they're perfect as a little treat which you can have without holding back because it's super healthy as always!
Here's the recipe:
300 g pitted medjool dates
A little milk
100 g oats
2 ripe bananas
80 g chopped almonds
1 tsp baking powder
2 sliced dried figs (optional)
Blend the dates with a little milk to make it easier for the blender.
Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Mix all the ingredients in a bowl and stir in the baking powder in lastly.
Use a tablespoon for scooping cookies out on the baking sheet and flatten them with your hand.
Bake in the oven for 30 minutes and decorate them with the sliced figs.
