Ovenbaked salmon with spinach

A dinner recipe for once! This ovenbaked salmon is so easy to cook and so healthy on the same time! There's many different ways to cook this beautiful fish but I prefer to cook it like this so it will keep it's fabulous flavor, be juicy, moist and melt in your mouth.
Not only is salmon filled with healthy proteins and omega-3's, it's bursting with flavor and tastes amazing! So why not give it a try?


Here's the recipe:

700 g salmon fillet
Juice from 1/2 lemon
200 g frozen spinach
Salt and pepper
One small chopped ginger
Soy sauce (optional)


Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Pour a little oil in the baking dish or ramekin and spread it with a paper towel.
Put the salmon in the middle and the frozen spinach next to it. Juice the lemon all over the salmon and spice with salt and pepper. Add ginger and soy sauce for extra flavor.
Cover with foil and put it into the oven for 30-40 minutes.
Take it out of the oven, remove the foil and top it with capers if you like.


Tip for cooking:
Turn the salmon upside down so the skin is up and cover it with paper towels. Put it into the oven for 20 minutes. Take it out of the oven and gently, remove the paper towels with the skin. Pour lemon juice, soy sauce, ginger and spices on it and cover with foil. Let it finish cooking in the oven for 20 more minutes and serve!
