Shakshuka is just a fancy name for a simple, healthy dish with eggs, vegetables and tomatoes. My friend and I cooked this for dinner yesterday and it was so rich in flavors, super delicious and filling!
Here's the recipe for 4 servings:
2 cloves of garlic
1 red paprika
Spices (like chili and paprika)
2 cans of tomato paste (280 g)
Instead of some of these ingredients, we used a bag of wok vegetables because it was so much easier.
Chop the vegetables and fry for 5 minutes.
Add all the spices and the tomato paste.
Put a lid on the pan and let it simmer on medium heat for 10-15 minutes.
Make four small holes and pour an egg in each of them and put the lid on again. Let it cook for another 5 minutes.
When the eggs are cooked, you can serve it with the sort of garniture you want. For an example with some bread, more vegetables or just some fresh basil on top.
