Baked red pepper
This recipe is great for lunch or dinner and contains lots of healthy nutrients! Usually, my recipes are for breakfast because breakfast is seriously my favorite meal of the day and I could have it any time of the day. My lunch often gets boring and sometimes I run out of salad combinations. If you do too then this recipe will definitely be what you're searching for! It's filled with proteins, vitamins, minerals and deliciousness! You can serve it with bread or have it alone, it will keep you full for super long!
Here's the recipe for one serving:
1 red pepper
5 cherry tomatoes
Salt and pepper
Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit.
Cut the top off the pepper and remove the core. Chop the vegetables and put them in a bowl.
Crack the egg in another bowl and season it with garlic, salt and pepper. Mix the egg with the vegetables and pour it into the red pepper. The rest of the filling can be put next to the red pepper in a baking dish. Cover it with tin foil and bake for 30-45 minutes or until the egg is cooked.
