Healthy pancakes

Yes, it is true! Pancakes can be sugar- and guilt free and still taste absolutely phenomenal! These pancakes are fluffy, sweet and healthy so what's not to like?
Normally, I make these pancakes for breakfast on Pancake Sunday when I have plenty of time to decorate them. But today was an exception because I made these tasty fellahs for my self and my sister for lunch! We enjoyed them with healthy homemade icecream made out of homegrown red- and blackcurrants and bananas (blogpost coming up). We even added some low-fat greek yoghurt (skyr) and some of my homemade chia seed jam which I'm going to post the recipe for in a couple of days here on the blog! A lot of delicious recipes are in draft so stay tuned and enjoy this one in the meantime!

Here's the recipe:

1 ripe banana
2 eggs
A little cinnamon or cocoa powder
1 tsp baking powder
1 dl or 2/6 cup oats

Mash the banana and mix it with eggs in a bowl. Add the oats, cinnamon or cocoa powder and the baking powder. Stir it all together and heat a little oil in a pan on medium heat. When the pan is hot, just cook the pancakes as you like!

You can serve your beautiful pancakes with fresh fruit, yoghurt or whatever you like!
